Continuing up highway 11 which then turns into 19 and then 270 (same road) you are headed up Waimea way. You can either go the coast route towards the cute little town of Hawi (great bakery) or you can go up 250 through paniolo "cowboy" country. If you are staying in the Waikoloa area, these are easy day trips. The weather is alot cooler up here so bring a jacket. You can rent ATV's, go horseback riding, hiking (go to the end of the road to Pololu Valley), great hike down to the ocean, but very rough and really no swimming here. Get some great fruit along the way. Stands where they have fruit and you just leave your money (pretty trustworthy, huh?). So, if you do go up the coast then make sure you come back through the country. You will enjoy the pines, open fields, watch the paniolos in action. If you come back to Waikoloa area, go over to either the King's or Queen's Marketplace for dinner. You can have a fancy dinner at Roy's or get some great Hawaiian food at the Queen's Marketplace and take back to your room. We usually stroll over to the Hilton Waikoloa where I could sit for hours watching the dolphins (no charge). You can take the boat around the property and stroll for hours. Great place to watch the sunset.
